Health Benefits of Fall Favorites
This month’s Wellness Wednesday was all about embracing the flavors of fall while nourishing your body! Chelsey Jackson, RD, shared delicious and practical ways to enjoy seasonal foods that support overall wellness.
From pumpkin and apples to kale and cauliflower, Chelsey highlighted how these colorful fall foods are packed with vitamins, fiber, and antioxidants that strengthen the immune system and protect against disease.

A few fall favorites we explored:
Pumpkin - High in fiber and beta carotene for eye and heart health. Try it in oatmeal, yogurt, or guilt-free desserts like crustless pumpkin pie!
Apples - Rich in vitamin C and phytonutrients, especially in the peel. Perfect for snacking or baking into apple nachos.
Sweet Potatoes - A single serving provides over 400% of your daily vitamin A! Enjoy them in chili, breakfast bowls, or savory quesadillas.
Kale - Packed with vitamins A, C, and K, and great in soups, salads, omelets, or smoothies.
Eggplant - Full of antioxidants that promote brain and heart health. Try it roasted, in babaganoush, or topped with pesto and cheese.
Butternut Squash & Cauliflower - Both nutrient-dense and versatile; swap cauliflower for mashed potatoes for a lighter side.
Pears - Sweet, full of fiber, and the perfect way to end your meal on a healthy note.
